Mastering the art of naturally leavened bread. This loaf features a crispy crust and a soft, tangy crumb. Still working on perfecting the ear!

My bubbly and active sourdough starter, lovingly named "Doughbi Wan".

The process took several days of feeding the starter and a long, slow fermentation. Key steps include autolyse, stretch-and-folds, shaping, cold proofing, and baking in a Dutch oven.

Ingredients: High-protein Bread Flour, Whole Wheat Flour, Water, Salt, Active Sourdough Starter.
